Obituary of Eunice Alvina Carroll (nee Watkins)
February 3, 1951 – October 15, 2023
Eunice Carroll, beloved wife of Leonard Albert Carroll of Little Bow Resort, AB, passed away peacefully in her sleep on Sunday, October 15, 2023, at the age of 72 years.
Eunice was born in Salt Pond (Embree), NL, on February 3, 1951. She moved to Ontario where she met the love of her life, Len. They wed on July 7, 1972, and celebrated 51 years of marriage. Together they raised their two children (“the million-dollar family”) in Calgary, AB, they moved to their acreage near Okotoks in 2007. When Len retired, they moved to their summer home full-time in Little Bow Resort.
Eunice had many achievements throughout her life, including working for Alberta Health Services for 30 years, retiring at the age of 58. She would say her greatest accomplishment though, was her family. She particularly cherished all the moments, big and small that she enjoyed with each of her 4 grandchildren. They were the light of her life. Eunice was always found in the kitchen cooking up a delicious meal to serve or baking yummy treats. She also loved crocheting and had an endless supply of colorful yarn.
She will be most remembered for her kind and caring heart, and the endless and unconditional love she had for her family and friends. She loved the holidays, especially Christmas where she would cook a Jig’s Dinner for as many family and friends who could come. The more the merrier! She was truly an angel on earth. She also always felt it important to maintain the connection with her family and friends in Newfoundland and made many trips “back home” to visit.
Eunice is survived by her beloved husband Len, daughter Renee, daughter-in-law Mandi, and her grandchildren, Mackenzie, Jackson, Emily, and Chelsea. Eunice is also survived by her brothers, Gerald and Lloyd and sister Thelma who all reside in Newfoundland, and by many cousins, nieces, nephews, and dear friends.
Eunice was predeceased by her beloved and only son Jamie, her sister, May Watkins, brothers, Peter Watkins and Norman Watkins, father George Watkins, mother Jane Potter and stepfather Keywood Potter.
Funeral Services will be held at McInnis & Holloway (Deerfoot South, 12281 – 40th Street SE, Calgary, AB) on Saturday, October 21, 2023, at 2:00 p.m. Reception to follow in the Hospitality Centre at the Funeral Home. Family and friends who are unable to attend in person are invited to join Mrs. Carroll’s service streamed live (see below) on the day of the service.
